Wash the organic lemons thoroughly under running water to remove any dirt or pesticides. Pat them dry with a clean towel.

Zest the Lemons
Using a vegetable peeler or a zester, carefully remove the zest (yellow part) of the lemons, avoiding the white pith as much as possible. Place the lemon zest in a large glass jar.

Add Vodka
Pour the high-proof vodka over the lemon zest in the jar. Ensure that the zest is fully submerged in the vodka. Seal the jar tightly with a lid.

Prepare the Simple Syrup
In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring regularly until the sugar has completely dissolved. Remove from heat and let it cool to room temperature.

Combine the Mixtures
After the infusion period, strain the lemon zest from the vodka using a fine-mesh strainer or cheesecloth into a clean bowl. Discard the zest. Then, mix the infused vodka with the cooled simple syrup, stirring well to combine.
