Method

Preparing the Meat Ragu

    Sauté the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened.

    Add the Meat

    Add the ground pork, ground veal, and Italian sausage to the pot. Cook until browned, about 10 minutes. Stir frequently to break up the meat.

    Add Garlic and Seasonings

    Add the minced garlic, salt, black pepper, dried oregano, and bay leaves. Stir to combine and cook for another 2 minutes.

    Deglaze with Wine

    Pour in the red wine and let it simmer for 5 minutes, scraping the bottom of the pot to release any browned bits.

    Add Tomatoes

    Stir in the crushed tomatoes. Bring to a simmer, then reduce heat and let it cook for at least 30 minutes, stirring occasionally.

Preparing the Cheese Mixture

    Combine Ingredients

    In a mixing bowl, combine the ricotta cheese, eggs, grated Parmesan cheese, salt, black pepper, and chopped parsley. Mix thoroughly until smooth.

Assembling the Lasagna

    Preheat Oven

    Preheat your oven to 180°C (350°F).

    Cook Lasagna Noodles

    Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Layer the Ingredients

    In a lasagna dish, spread a thin layer of meat ragu on the bottom. Place a layer of noodles over the sauce, then add a layer of the cheese mixture, followed by shredded mozzarella. Repeat the layers, finishing with a layer of meat ragu and topping it with additional mozzarella and grated Parmesan.

    Bake the Lasagna

    Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

    Let It Rest

    Once done, remove the lasagna from the oven and let it rest for at least 15 minutes before slicing and serving.
