Base Preparation

Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is steaming but not boiling.

Whisk the Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Base
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Chill the Base
Transfer the cooled mixture to a bowl, cover, and refrigerate for at least 4 hours or overnight.
Flavoring and Churning

Prepare Flavor
Choose your flavor variation. For chocolate gelato, add the chocolate syrup to the chilled base. For strawberry, fold in the pureed strawberries. For pistachio, stir in the crushed pistachios. For coffee gelato, mix in the cooled brewed coffee.

Churn the Gelato
Pour the flavored base into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-30 minutes until the mixture thickens and has a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 2 hours or until firm.
