Sauté the Shrimp
Add the shrimp to the skillet, season with salt and black pepper, and cook for 3-4 minutes until they turn pink and opaque. Remove from heat and set aside.
Black Garlic-Squid Ink Risotto

Add Rice
Stir in the Arborio rice, coating it with the oil and onion mixture. Cook for 1-2 minutes until the rice is slightly transparent.

Deglaze with Wine
Pour in the white wine and stir until it's mostly absorbed by the rice.

Add Broth Gradually
Begin adding the broth, one ladle at a time, stirring continuously. Wait until the broth is mostly absorbed before adding more.

Incorporate Black Garlic and Squid Ink
After about 15 minutes, stir in the mashed black garlic and squid ink, mixing well until the risotto is creamy and has a rich color.

Finish with Cheese and Butter
Remove from heat, stir in the grated Parmesan cheese and butter until melted and combined.
Florentino Cauliflower

Prepare the Cauliflower
Preheat the oven to 200°C (400°F). In a bowl, toss cauliflower florets with olive oil, salt, and black pepper.

Roast the Cauliflower
Spread the cauliflower on a baking sheet and roast for 20-25 minutes until golden and tender. Sprinkle with fresh parsley before serving.
Pesto Calabrese

Blend the Pesto
In a food processor, combine sun-dried tomatoes, basil leaves, pine nuts, grated Parmesan cheese, olive oil, and minced garlic.

Process Until Smooth
Blend until a smooth paste forms. Adjust seasoning if necessary.
Smoked Olive Oil

Prepare Smoked Oil
In a small bowl, mix olive oil with liquid smoke. Stir well and set aside for drizzling.
