Preparing the Calamari

    Prepare the Calamari

    In a large bowl, combine the cleaned calamari rings with the salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

    Set Up Breading Station

    In another bowl, whisk together the flour and cornstarch. In a separate bowl, beat the eggs. Set up your breading station with the flour mixture, beaten eggs, and a plate for the breaded calamari.

    Bread the Calamari

    Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally back into the flour mixture. Place on the plate and repeat until all calamari are coated.

Frying the Calamari

    Heat Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, oregano, salt, black pepper, and sugar. Bring to a simmer and let cook for 10-15 minutes, stirring occasionally.

    Finish the Sauce

    Stir in the chopped fresh basil and remove from heat. Adjust seasoning to taste.

Serving

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
