Prepare the Yeast
In a small bowl, combine the warm water and sugar. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and 1/4 cup of the extra virgin olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead it for about 8-10 minutes until smooth and elastic. If the dough is sticky, add a little extra flour as needed.

First Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape the Focaccia
Once the dough has risen, punch it down and transfer it to a greased baking sheet. Use your fingers to stretch and flatten the dough to fit the pan, creating dimples all over the surface.

Second Rise
Cover the shaped dough with a cloth and let it rise for another 20-30 minutes.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Add Toppings
Drizzle the remaining extra virgin olive oil over the top of the dough. Sprinkle with sea salt and chopped fresh rosemary if using.

Bake
Bake the focaccia in the preheated oven for 20-25 minutes or until golden brown.

Serve with Aged Balsamic Vinegar
Once baked, remove the focaccia from the oven and let it cool slightly. Cut into pieces and serve with aged balsamic vinegar for dipping.
