Flatbread Preparation

    Mix Ingredients

    In a mixing bowl, whisk together the chickpea flour, salt, and water until smooth and free of lumps.

    Add Olive Oil

    Stir in the olive oil until fully incorporated.

    Rest the Batter

    Let the batter rest for at least 30 minutes at room temperature.

Caramelized Onions Preparation

    Slice Onions

    Thinly slice the onions and set aside.

    Heat Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook Onions

    Add the sliced onions and salt to the skillet. Cook, stirring occasionally, for 10-15 minutes until softened.

    Add Sugar

    Sprinkle the sugar over the onions and continue to cook for another 10-15 minutes until they are golden brown and caramelized.

Cooking the Flatbread

    Preheat Oven

    Preheat your oven to 450°F (230°C).

    Lightly grease a baking sheet or pizza stone with olive oil.

    Pour Batter

    Pour the rested chickpea batter onto the prepared baking sheet, spreading it evenly into a thin layer.

    Bake in the preheated oven for 10-15 minutes, or until the edges are crispy and golden.

Assembly

    Add Toppings

    Once the flatbread is out of the oven, sprinkle the caramelized onions evenly over the top, followed by the grated Parmesan cheese.
