Prepare the Beef

Slice the Beef
Wrap the beef tenderloin in plastic wrap and place it in the freezer for about 30 minutes to firm it up. Once firm, thinly slice the beef using a sharp knife. Arrange the slices on a large plate, overlapping them slightly.

Season the Beef
Drizzle the olive oil over the beef slices. Season with salt and black pepper to taste.
Prepare the Cipollini Onions

Cook the Onions
In a small saucepan, combine cipollini onions, balsamic vinegar, and honey. Cook over medium heat until the onions are tender and the mixture thickens slightly, about 10 minutes. Remove from heat and let cool.
Make the Patatine (Potato Chips)

Fry the Potatoes
In a large pot, heat vegetable oil to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 3-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.
Prepare the Pecorino Cheese

Grate the Cheese
Grate the pecorino cheese using a fine grater or a microplane and set aside.
Prepare the Pickled Peppers

Drain the Peppers
If using jarred pickled peppers, drain them from the liquid and slice them if large. Set aside.
