Chocolate Custard

Prepare the Chocolate Base
In a saucepan, combine the whole milk, heavy cream, granulated sugar, and cocoa powder. Heat over medium heat, stirring until the mixture is smooth and just begins to simmer.

Thicken the Custard
In a separate bowl, whisk together the cornstarch and a few tablespoons of the warm milk mixture until smooth. Gradually whisk this mixture back into the saucepan. Continue to cook, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes.

Incorporate Chocolate and Egg Yolks
Remove the saucepan from the heat and stir in the chopped bittersweet chocolate until melted. Add the vanilla extract. In a bowl, whisk the egg yolks lightly, then temper by adding a small amount of the warm custard mixture to the yolks while whisking. Gradually add the yolk mixture back into the saucepan, stirring well.

Chill the Custard
Pour the chocolate custard into serving dishes or ramekins. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours, or until set.
Limoncello Macerated Cherries

Macerate the Cherries
In a bowl, combine the pitted cherries, limoncello, and granulated sugar. Toss to coat the cherries well. Let sit for at least 30 minutes at room temperature to allow the flavors to meld.
Mint-Cocoa Tuile

Prepare the Tuile Batter
Preheat the oven to 350°F (175°C). In a bowl, whisk together the cocoa powder, granulated sugar, and flour. Add the egg whites and melted butter, mixing until smooth. Fold in the finely chopped mint leaves.

Bake the Tuiles
Line a baking sheet with parchment paper. Drop teaspoonfuls of the batter onto the sheet, spreading them thinly into circles. Bake for 10-12 minutes, or until the edges are crisp. Remove from the oven and let cool slightly before transferring to a wire rack to cool completely.
