Marinated Tomatoes

    Prepare the Tomatoes

    Dice the ripe tomatoes into small pieces and place them in a mixing bowl.

    Add Marinade

    Drizzle the olive oil and balsamic vinegar over the tomatoes. Add the fresh basil leaves, salt, and black pepper. Toss gently to combine.

    Marinate

    Let the mixture sit for at least 30 minutes to allow the flavors to meld.

Fava Bean Pesto

    Blend Ingredients

    In a food processor, combine the cooked fava beans, pine nuts, minced garlic, olive oil, lemon juice, grated Parmesan, salt, and black pepper.

    Blend until smooth, adding a little water if necessary to achieve the desired consistency.

    Taste and Adjust

    Taste the pesto and adjust seasoning if necessary – add more salt, pepper, or lemon juice as desired.

Grilled Bread

    Prepare the Bread

    Slice the baguette or ciabatta loaf into thick slices.

    Brush both sides of the bread slices with olive oil.

    Preheat a grill or grill pan over medium heat. Grill the bread slices for 2-3 minutes on each side until golden and crispy.

Assembly
