Make ginger syrup
Combine sliced fresh ginger, water and sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer 8–10 minutes to infuse. Remove from heat, let cool to room temperature, then strain through a fine mesh sieve into a jar. Press on solids to extract syrup. Refrigerate; yields about 6 oz. Use 0.5 oz per cocktail.

Muddle jalapeño
In a cocktail shaker, add 2 fresh jalapeño slices (remove seeds for less heat). Gently muddle once or twice to release oils and a touch of heat — avoid pulverizing to prevent overpowering spice.

Add liquids
To the shaker add 2 oz dark aged rum, 0.75 oz fresh lime juice, 1 oz fresh pineapple juice, 0.5 oz ginger syrup, 0.5 oz grapefruit juice, 0.25 oz amaro (or 2 dashes aromatic bitters), and 0.25 oz simple syrup.

Shake
Add a handful of ice (or crushed/cracked ice) to the shaker and shake vigorously for 12–15 seconds until the shaker is cold and frosty. This mellows the heat and properly chills and dilutes the drink.

Strain
Double-strain (using a Hawthorne and fine mesh strainer) into a chilled rocks glass filled with cracked ice to remove jalapeño bits and pulp for a smooth, velvety texture.

Optional top & finish
If desired, top with 0.5–1 oz club soda for a lighter fizz. Garnish with a dehydrated lime wheel or lime wedge and a piece of candied ginger on the rim for contrast. Give a gentle stir to integrate any soda.

Serve
Serve immediately while cold. Note: adjust jalapeño and simple syrup to taste — more jalapeño for heat, more simple syrup for sweetness.
