Prepare ramekins
Preheat oven to 425°F (220°C). Butter six 6-ounce (180 ml) ramekins thoroughly with the 2 tbsp unsalted butter, making sure to coat bottom and sides. Sprinkle about 2 tbsp granulated sugar into each buttered ramekin, tilt and rotate to evenly coat the interior and discard excess sugar. Place ramekins on a baking sheet; set aside in the refrigerator or at room temperature while you prepare the batter.

Melt chocolate and butter
Chop the 6 oz chocolate finely. In a heatproof bowl set over (but not touching) simmering water (double boiler), combine chopped chocolate and 4 tbsp diced butter. Stir frequently until fully melted and smooth. Remove from heat.

Finish base
Stir 2 tbsp heavy cream, 1 cup granulated sugar, and 1 tsp vanilla extract into the warm chocolate mixture until glossy and slightly loosened. Allow the mixture to cool for 3–4 minutes so it is warm but not hot (to prevent cooking the yolks).

Incorporate yolks
Whisk the 6 large egg yolks into the slightly cooled chocolate mixture one at a time until fully incorporated and smooth. Set aside.
Egg Whites & Assembly

Whip whites
In a clean, dry mixing bowl, add the 6 large egg whites with a pinch of salt and 1 tsp cream of tartar. Using a hand or stand mixer on medium speed, beat until foamy. Gradually add 1/4 cup of the reserved granulated sugar (from the 1 cup total used earlier, see note) — if you used the full cup in the base, instead add 1/4 cup additional sugar here — then increase speed to high and beat until stiff, glossy peaks form. The meringue should hold a sharp peak and be smooth.

Fold whites into base
Spoon one large dollop (about one-third) of the beaten egg whites into the chocolate-yolk mixture and stir briskly to lighten it. Then, using a rubber spatula, fold the remaining egg whites gently in two additions: cut through the center, scoop from under, and fold over, rotating the bowl until no white streaks remain. Take care not to deflate mixture; aim for a uniform, airy batter.

Optional molten centre
If using frozen ganache rounds or truffles, press one into the center of each prepared ramekin now, gently pushing it slightly into the batter but leaving at least 1/2 inch to the rim for rise. If not using, proceed without.

Fill ramekins
Divide the batter evenly among the six prepared ramekins, filling to about 3/4 full (leaving room for rise). Smooth the tops with an offset spatula and run a thumb or the back of a knife around the inside rim to create a small well that helps the soufflé rise evenly.
Baking & Serving

Bake
Place the baking sheet with ramekins into the preheated 425°F (220°C) oven. Bake for 12–14 minutes for custardy centers with risen edges; if you added frozen ganache centres, bake 14–16 minutes. The tops should be puffed, set, and have a slight wobble in the center.

Finish and serve
Remove soufflés from oven. Dust tops lightly with confectioners' sugar. Serve immediately (within 1–2 minutes) while puffed and hot so the centre remains molten. Recommend serving with a spoonful of chilled crème fraîche or vanilla ice cream alongside, if desired.
