    Make a simple syrup

    Combine water and granulated sugar in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves and the liquid is clear (do not boil vigorously). Remove from heat and let cool to room temperature.

    Prepare fruit base

    If using whole fruit: peel and pit or hull as needed and roughly chop. Puree the fruit in a blender or food processor until completely smooth (about 1–2 minutes). If using store-bought puree, measure 2 cups.

    Adjust the sorbet balance

    Stir the cooled simple syrup into the fruit puree. Add the fresh lemon juice, the optional corn syrup or glucose (for a smoother, less icy texture), and a pinch of salt. Taste and adjust: the mixture should taste slightly brighter than you want the finished sorbet (a little more acidic and slightly sweeter will finish well after freezing).

    Chill the mixture

    Cover the fruit-syrup mixture and chill in the refrigerator until very cold, at least 2 hours (overnight is best). Chilling ensures better texture when churned.

    Churn the sorbet

    Pour the cold mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve sorbet consistency (usually 20–30 minutes). If you do not have an ice cream maker: pour mixture into a shallow metal pan, freeze for 30–45 minutes, then vigorously whisk or break up frozen edges with a fork; repeat every 30 minutes until evenly frozen and smooth (about 3–4 cycles).

    Harden the sorbet

    Transfer the churned sorbet into a freezer-safe container, pressing a piece of plastic wrap or parchment directly on the surface to prevent ice crystals. Freeze for at least 2 hours to firm up.

    Serve

    Scoop the sorbet into chilled bowls or dessert glasses. Garnish with a mint leaf or a thin slice of the same fruit, if desired. Serve immediately.
