Add gin (2 oz), vodka (0.5 oz), rosé wine (2 oz), rose liqueur (0.5 oz), fresh lemon juice (0.5 oz), simple syrup or rose syrup (0.25 oz), egg white (0.5 oz, optional), and 2 dashes orange bitters into a cocktail shaker (without ice) for a dry shake.

Dry shake
Seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and integrate flavors. This creates a rich, velvety texture.

Wet shake
Open the shaker, add a generous handful of ice, reseal and shake hard for 10–15 seconds until well chilled and slightly frothy.

Discard the ice or water from your chilled glass and double-strain the cocktail into the chilled coupe or Nick & Nora glass using a fine mesh strainer to remove ice chips and any large foam bubbles.

Top with sparkle
Gently top the poured cocktail with 1 oz dry sparkling wine or Champagne. Pour slowly to preserve a delicate layer of foam and light effervescence.

If desired, lightly stir the top with a bar spoon once to integrate the sparkling component without collapsing the foam entirely.

Garnish with an edible rose petal placed on the foam or a small sprig of rosemary laid across the rim. Optionally, express a thin lemon twist over the surface to add aroma.

Serve immediately while the top is bubbly and the foam is fresh. Present as a romantic, fragrant cocktail appropriate for aperitif or special occasions.

Variations: For a non-alcoholic version, replace gin and vodka with a floral non-alcoholic spirit and use alcohol-free sparkling wine; swap rosé wine for chilled hibiscus tea + a splash of white grape juice. For vegan option, omit egg white and add 0.25 oz aquafaba as a substitute.

Make-ahead tip: Pre-mix the base (gin, vodka, rosé, rose liqueur, lemon juice and syrup) in a bottle and keep chilled; when ready, pour 3.25 oz into a shaker with egg white (optional) and proceed with dry/wet shake and top with sparkling wine.
