    Prep smoked rosemary

    Lightly char the rosemary sprig: using a kitchen torch or a lit match, briefly singe the tip of the rosemary until it begins to smoke (about 2–3 seconds). Set aside on a heatproof surface, keeping the sprig intact for later use as a garnish/smoke source.

    Optional rim

    If using smoked salt, lightly wet the rim of an old-fashioned glass with a cut orange or a lemon wedge, then dip the rim into the smoked salt to coat a thin edge. Set the glass aside.

    Combine liquids

    In a mixing glass or cocktail shaker, add 2 oz bourbon, 0.5 oz peat-smoked Scotch, 0.75 oz fresh lemon juice, 0.75 oz honey syrup, 2 dashes aromatic bitters and 1 dash orange bitters.

    Dry shake (optional)

    If you prefer a slightly frothier texture, seal the shaker and shake vigorously without ice for 10 seconds to combine and slightly emulsify the honey syrup with the lemon juice.

    Shake with ice

    Add ice to the shaker, then shake vigorously for 10–15 seconds until well chilled and slightly diluted (shaker exterior should feel very cold).

    Prepare glass

    Place one large ice cube into the prepared old-fashioned glass (rimmed with smoked salt if used).

    Strain

    Double-strain the cocktail into the glass over the large ice cube to remove small ice shards and any herb bits.

    Add smoked rosemary and smoke

    Place the previously charred rosemary sprig on top of the drink. Light it briefly again if needed so it produces a steady wisp of smoke (use caution). Immediately cover the glass with a shaker tin, coaster, or inverted bowl for 10–20 seconds to trap the smoke and infuse the cocktail with a concentrated smoky aroma. After 10–20 seconds, remove the cover — the drink will carry a bold aromatic smokiness.

    Express orange oils and garnish

    Express the orange peel over the surface of the drink by holding it over the glass (skin-side down) and giving it a firm squeeze to release oils, then run the peel around the rim and place it on the drink as garnish alongside the smoldering rosemary sprig.

    Serve

    Serve immediately. Sip slowly to appreciate the layered flavors: the bourbon's warmth, the peat-smoke depth, bright citrus, and sweet honey balancing the bitterness. If the rosemary extinguishes, relight briefly before presenting for a dramatic effect (exercise caution).
