    Prepare ginger

    Peel the ginger with a spoon or paring knife and slice it as thinly as possible (about 2 mm). Thin slices release flavor quickly and make pressing the syrup easier.

    Combine sliced ginger, 1 cup water, and 1 cup granulated sugar in a small saucepan. Stir briefly to moisten the sugar.

    Bring mixture to a gentle boil over medium heat, stirring occasionally to dissolve sugar. Once it reaches a simmer, reduce heat to low and simmer gently for 10–12 minutes to extract ginger flavor. You should smell a strong ginger aroma and see syrup slightly thicken.

    Remove the saucepan from heat and let the ginger steep in the syrup for an additional 20–30 minutes for more intensity (taste after 20 minutes and steep longer if you want stronger ginger).

    Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof bowl or jar, pressing on the solids to extract as much liquid as possible. Discard solids. Let the syrup cool to room temperature.

Lemon Finish & Serving

    Juice enough lemons to yield about 120 ml (roughly 2–3 medium lemons). If using zest, zest before juicing and reserve 1 tablespoon of lemon zest.

    In a large pitcher, combine the cooled ginger syrup and fresh lemon juice. Add a pinch (about 1 tsp) of sea salt to enhance flavor and balance acidity.

    Taste the concentrated lemon-ginger mixture. To serve as a ready-to-drink beverage, dilute with 600 ml cold water or sparkling water (adjust to taste). For a stronger concentrate (for cocktails or iced tea mixing), use less water.

    Fill glasses with ice (about 1 cup ice per serving). Pour the diluted lemon-ginger drink over the ice. Stir gently.

    Garnish each glass with fresh mint leaves and a twist of lemon zest if using. Serve immediately chilled.
