Method

For the cocktail

  1. 1

    Muddle

Place the 3 thin cucumber slices in a cocktail shaker. Add the simple syrup and gently muddle 6–8 times to release cucumber oils and juice without pulverizing—aim for fragrant release, not pulp.

  2. 2

    Build

Add the gin, fresh lemon juice, and Campari to the shaker. Fill the shaker about two-thirds with ice.

  3. 3

    Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled (this both chills and dilutes slightly).

To top / garnish

  1. 4

    Strain & top

Double-strain the shaken mixture into a chilled Collins or highball glass filled with fresh ice (use a Hawthorne and fine mesh strainer to remove cucumber bits). Top with about 2 oz chilled club soda, pouring gently to preserve effervescence.

  2. 5

    Garnish & finish

Give the drink a gentle stir (1–2 turns) to integrate soda. Slap the mint sprig between your palms to release aroma and place it on top. Add a cucumber ribbon along the inside of the glass or float it on top for a cooling visual and aroma.
