Measure and heat water
Measure 2 cups (about 480 ml) of fresh cold water. Pour into a kettle and heat to just under boiling — target temperature 175–185°F (80–85°C). If you don’t have a thermometer, bring to a full boil then remove from heat and let sit 1–2 minutes to cool slightly.

Steep
Pour the hot water over the tea leaves. Cover the teapot or cup to retain heat and steep for 2–3 minutes. Steep 2 minutes for a lighter flavor, up to 3 minutes for fuller flavor. Avoid steeping longer than 3 minutes to prevent bitterness.

Strain and serve
If you used an infuser or teapot, remove the infuser or strain the leaves into a cup. If leaves were added loose, pour through a fine mesh strainer into a cup to remove solids.

Optional finishing
If desired, add 1 teaspoon honey and stir until dissolved, or garnish with a slice of lemon and/or 1–2 fresh mint leaves. Taste and adjust: add more honey for sweetness or an extra lemon slice for brightness.
