    Heat water

    Bring 12 oz (about 355 ml) of fresh cold water to a gentle boil in a kettle or small saucepan. Remove from heat as soon as it reaches a rolling boil.

    Steep chamomile

    Place 3 tsp dried chamomile flowers in a teapot or an infuser set in a mug. Pour the hot water over the flowers and cover to trap the steam. Let steep for 5 to 7 minutes for a balanced, floral cup (5 minutes for lighter flavor, up to 7 for stronger).

    Strain

    After steeping, strain the tea into a cup using a fine mesh strainer or remove the infuser. Press gently on the flowers with the back of a spoon if you want slightly more body, but avoid over-pressing to prevent bitterness.

    Sweeten and finish

    If desired, stir in 1 tsp honey while the tea is still warm so it dissolves evenly. Add 1 tsp fresh lemon juice to brighten the flavor if you like a hint of acidity.
