- 1
Chill glass
Optionally chill a large wine glass in the freezer for 5–10 minutes or fill it with ice and let it sit for 1 minute; discard any meltwater so the drink stays cold.
- 2
Add ice
Fill a large wine glass generously with fresh ice cubes until nearly full. This keeps the bubbles from dissipating quickly.
- 3
Pour Aperol
Measure and pour 3 parts Aperol over the ice (typical volumes: 3 oz Aperol if using ounces, or use a jigger: 1½ oz Aperol if scaling to smaller portions).
- 4
Add Prosecco
Add 2 parts chilled Prosecco gently to the glass. Pour slowly down the side to preserve carbonation and encourage gentle mixing.
- 5
Top with soda
Add 1 part chilled soda water (about a splash) to top off the drink. Adjust to taste if you prefer it lighter or stronger.
- 6
Gentle stir
Use a bar spoon to stir gently once or twice to combine liquids without losing too much effervescence.
- 7
Garnish and serve
Garnish with one fresh orange wheel placed on the rim or floated in the glass. Serve immediately while cold and fizzy.
