Prepare the Rice

Rinse the short-grain rice under cold water until the water runs clear. Drain well.

Cook the Rice

In a medium saucepan, combine the rinsed rice with 1 cup of milk and a pinch of salt. Bring to a boil over medium heat, then reduce to a simmer. Cover and cook for about 15 minutes, or until the rice is tender and the liquid is absorbed.

Make the Pudding Mixture

In a separate bowl, whisk together the remaining 3 cups of milk, sugar, cornstarch, and vanilla extract until smooth.

Combine and Cook

Once the rice is cooked, add the pudding mixture to the saucepan with the rice. Stir well and bring to a gentle boil over medium heat, stirring constantly until the mixture thickens (about 5-7 minutes).

Serve

Remove from heat and pour the rice pudding into serving bowls. Sprinkle with ground cinnamon and garnish with chopped nuts if desired. Allow to cool slightly before serving, or refrigerate for a chilled dessert.
