Chill and Prepare

Refrigerate large mixing vessel (punch bowl or beverage dispenser) for at least 30 minutes. Chill juices in advance so the final mix stays cold longer.

In a clean 3–4 quart pitcher or directly in the chilled beverage dispenser, combine 3 cups white rum and 1 cup dark rum. Swirl gently to blend.

Add 6 cups pineapple juice, 4 cups orange juice, 2 cups guava juice and 1 cup freshly squeezed lime juice to the rums. Stir with a long spoon until homogeneous.

Add 1 cup simple syrup to the mixture. Taste and adjust: if you prefer sweeter, add up to 1/2 cup more; if too sweet, add up to 1/2 cup more lime juice.

Cover the dispenser and refrigerate the base mix for at least 1 hour (or up to 6 hours) to allow flavors to marry. Keep chilled until service.

Sparkle & Finish

Just before serving, slowly add 6 cups cold club soda or sparkling water to the chilled base mix to preserve carbonation. Stir gently 6–8 times—do not over-stir.

Add 12 teaspoons angostura bitters to the dispenser, distributing evenly. Bitters add aromatic complexity—stir gently once to incorporate.

Fill serving glasses or a large punch bowl with crushed ice (about 3–4 oz / 85–115 g per glass). If using a dispenser with a spigot, place ice only in the serving glasses to avoid melting the whole batch quickly.

Garnish each serving with an orange slice, a pineapple wedge, and a mint sprig. Lightly clap the mint between your hands before garnishing to release aromatics.

Serve immediately. Provide a ladle if using a punch bowl or let guests dispense from the beverage dispenser.

Keep extra club soda chilled and add more just before guests serve to maintain fizz if the event extends.

Optional Non-Alcoholic Batch (serves ~12)

In a chilled beverage dispenser combine 8 cups pineapple juice, 6 cups orange juice, 2 cups guava nectar and 1 cup lime juice.

Add 1 cup simple syrup, taste and adjust sweetness as desired. Refrigerate the non-alcoholic base for at least 1 hour.

Immediately before serving, add 6 cups cold club soda to the base and stir gently. Garnish as above with orange, pineapple and mint. Serve over crushed ice.
