Method
Prepare oven and dish
Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie dish, 1-quart baking dish, or oven-safe skillet with cooking spray or a little oil.
Make the buffalo chicken mixture
In a large bowl, combine the softened cream cheese (cut into pieces so it blends easily), shredded cooked chicken, 1 cup hot pepper sauce, 1 cup ranch dressing, minced garlic, 1 cup shredded cheddar, 1 cup shredded mozzarella, 1/2 cup blue cheese crumbles (if using), 1/2 tsp black pepper and 1/4 tsp salt. Use a sturdy spoon or electric mixer on low to beat until the mixture is evenly combined and creamy. Taste and adjust hot sauce or salt as desired.
Assemble and top
Spoon the combined mixture into the prepared baking dish and spread it into an even layer. Sprinkle the reserved 1/2 cup shredded cheddar evenly over the top.
Bake
Place the dish in the preheated oven and bake until the dip is bubbly around the edges and the top is lightly golden, about 20–25 minutes. If you prefer a browned top, turn the oven to broil for 1–2 minutes while watching closely to prevent burning.
Finish and serve
Remove the dip from the oven and let rest for 3–5 minutes. Sprinkle chopped green onions and crumbled blue cheese (if using) over the top. Transfer to the table with celery sticks and tortilla chips or crackers for dipping. Serve warm.
