Prepare cheese

If using a block of mozzarella, cut into 3-inch by 1/2-inch thick sticks. Pat sticks dry with paper towels. If using frozen preformed sticks, keep them frozen until ready to coat; if they are thawed, chill them on a tray in the freezer for 15–20 minutes before breading to reduce leaking during frying.

Make batter

In a medium bowl, whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp paprika until evenly combined. Pour in 1 cup very cold beer and whisk until mostly smooth; batter should be thick enough to coat a spatula but still pourable. If batter seems too thick, whisk in up to 1/4 cup ice water a tablespoon at a time until it reaches a heavy pancake-batter consistency. Chill batter in the refrigerator for 10–15 minutes while you set up the coating station.

Set up dredging station

Place 1/2 cup flour in a shallow dish. Beat 2 large eggs in a second shallow bowl. Combine 2 cups breadcrumbs and 1/4 cup grated Parmesan in a third shallow dish and mix.

Dredge and bread

Working in batches of 4–6 sticks, lightly toss each mozzarella stick in the 1/2 cup flour to dust off moisture. Dip into the beaten eggs, letting excess drip off, then coat thoroughly in the breadcrumb mixture. For extra security, place breaded sticks on a baking sheet and freeze or chill for 10–20 minutes to firm the coating before the beer batter step. This helps prevent the cheese from bursting and reduces batter slippage.

Batter coat

Remove chilled breaded sticks from the freezer or fridge. One at a time, dip each breaded stick into the cold beer batter, turning to fully coat. Allow excess batter to drip off for 3–5 seconds, then transfer to a clean tray and keep chilled while frying. Repeat until all sticks are coated. Keep coated sticks in the refrigerator for at least 10 minutes if time allows; this further reduces cheese leakage.

Heat oil

Pour about 1.5 cups vegetable oil into a medium heavy-bottomed pot or deep skillet (amount depends on your cookware; oil should be deep enough to fully submerge sticks, roughly 1.5–2 inches). Heat over medium-high heat until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter—if it sizzles and browns in about 45–60 seconds, the oil is ready.

Fry sticks

Fry the beer-battered mozzarella sticks in small batches (3–4 at a time depending on pot size) to avoid temperature drop. Gently lower sticks into the hot oil using tongs. Fry 1.5–2 minutes, turning if necessary, until batter is golden brown and crisp. Do not overcrowd the pot. If you used frozen preformed sticks, they may require an additional 30–45 seconds. Remove with a slotted spoon or tongs and drain on a wire rack set over a sheet pan or on paper towels.

Second fry (optional for extra crispness)

For an even crisper result, after the initial frying, let sticks rest 1–2 minutes, then refry for 20–30 seconds at 375°F (190°C) until extra golden. Drain again.

Keep warm

Keep finished sticks warm in a low oven (200°F / 95°C) on a wire rack while you finish remaining batches to maintain crispness.

To Serve

Transfer beer-battered mozzarella sticks to a serving platter. Sprinkle with chopped parsley if using. Serve immediately with warmed marinara sauce for dipping.
