Preheat and prepare pan

Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it so beans won't stick.

Trim and dry

Trim the stem ends from the green beans (snap or cut). Pat the beans dry thoroughly with kitchen towels or paper towels — excess moisture prevents browning.

Toss with oil and seasonings

Place the dried green beans in a large bowl. Add 2 tablespoons olive oil, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Toss with your hands or tongs until each bean is evenly coated.

Arrange and space

Spread the green beans in a single layer on the prepared baking sheet with a little space between them. Crowding causes steaming instead of roasting.

Bake

Bake in the preheated oven for 12–16 minutes, stirring or shaking the pan once halfway through (around 7–8 minutes). Roast until beans are tender-crisp and have brown blistered spots at the edges.

Garlic (if using)

If using minced garlic, sprinkle it over the beans in the final 2–3 minutes of baking so it softens and becomes fragrant without burning. Alternatively, sauté the garlic in 1 teaspoon olive oil for 30–45 seconds and toss with the baked beans immediately after removing them from the oven.

Panko and Parmesan (if using)

For a crisp topping, toast 1 tablespoon panko in a small skillet over medium heat with 1 teaspoon olive oil until golden, about 2–3 minutes. Remove from heat and stir in 1 ounce grated Parmesan. Sprinkle the mixture evenly over the baked beans right after they come out of the oven so the cheese melts slightly and the crumbs stay crisp.

Finish and season

After baking, remove the beans from the oven and, while still hot, add any chosen finishing touches: 1 teaspoon lemon zest for brightness, a pinch (about 1/4 teaspoon) red pepper flakes for heat, and additional salt or pepper to taste. Toss gently to combine.

Transfer the baked green beans to a serving platter and serve immediately as an appetizer. Leftovers can be served at room temperature or gently reheated.
