Rinse 1 cup grapes and stem them. Place grapes in a medium saucepan.

Add 1 cup water and 1 cup granulated sugar to the pan. Stir to combine.

Bring mixture to a gentle boil over medium heat, then reduce heat to low and simmer, uncovered, for 10–12 minutes, crushing grapes occasionally with a spoon to release juices and color.

Remove from heat and let cool for 10 minutes. Using a fine mesh sieve or cheesecloth, press the solids to extract as much liquid as possible. Discard solids (or reserve for compote).

Stir in 1 tablespoon fresh lemon juice to brighten flavor and help preserve the syrup. Taste and adjust sweetness: if too tart, return to low heat with 1–2 teaspoons sugar until dissolved.

Cool the syrup to room temperature, then chill in the refrigerator if making ahead. This yields about 3/4 to 1 cup syrup; use 2 tablespoons per cocktail.

Cocktail Assembly

Chill glass

If desired, place a coupe or Collins glass in the freezer for 5–10 minutes before assembling the drink.

Fill a cocktail shaker halfway with ice (about 1 cup) to properly chill and dilute the drink.

Add 3 tablespoons vodka (or gin), 2 tablespoons chilled grape syrup, and 1 tablespoon fresh lemon juice into the shaker.

Shake vigorously for 10–12 seconds until the outside of the shaker feels cold.

Strain the mixture into the chilled glass filled with fresh ice (or serve up without ice if using a coupe).

Top with 3 ounces chilled club soda or sparkling water, gently stirring once to combine without losing too much effervescence.

Garnish with 3–4 halved fresh grapes threaded on a cocktail pick and a sprig of mint, if using. Optionally, express a lemon peel over the drink for added aroma.
