Prepare Shrimp

Rinse the shrimp under cold water and pat dry with paper towels. If not already peeled and deveined, remove shell and vein, leaving tails on or off as you prefer.

Flavor Base

In a shallow bowl or plate that fits into your steamer (or a heatproof dish for a wok/large pot), combine 2 cups water, sliced ginger, white parts of the green onions (or whole stalks), 1 tsp kosher salt, and 1 tablespoon rice wine. Stir briefly to dissolve salt.

Arrange Shrimp

Lay shrimp in a single layer in the dish, pouring a little of the ginger-onion liquid around (not over) them so steam carries the aromatics. Scatter any remaining ginger on top.

Steam

Set up a steamer basket over simmering water (or place the dish in a covered wok/pot on a rack). Steam the shrimp, covered, until just opaque and firm—about 4–6 minutes depending on size. Check at 3.5–4 minutes for large shrimp to avoid overcooking. Internal temperature should reach 120–125°F (49–52°C) for optimal tenderness.

Rest

Remove shrimp from the steamer and transfer to a plate. Let rest 2 minutes; residual heat will finish cooking. Discard the ginger and onion pieces from the cooking liquid or reserve a few slices for garnish.

Sauce & Dressing

While the shrimp steam, combine 3 tablespoons low-sodium soy sauce, 1 teaspoon toasted sesame oil, 1 teaspoon mirin or rice vinegar, 1 tablespoon fresh lime juice, 1 teaspoon honey, and the grated garlic in a small bowl. Whisk until honey dissolves and mixture is homogeneous.

Taste and adjust: add up to 1 teaspoon more honey if you prefer sweeter, or another 1/2 teaspoon rice vinegar for brighter acidity. Stir in 1 teaspoon red pepper flakes and the thinly sliced green parts of the scallions. Reserve about 1 tablespoon of this sauce for drizzling the rice and the rest for serving with shrimp.

Rinse and Cook Rice

Rinse 2 cups short-grain rice under cold water until the runoff is nearly clear to remove excess starch. Drain well. Combine rinsed rice and 2.25 cups water in a medium saucepan with a tight-fitting lid. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer 15 minutes. Remove from heat and let sit, covered, 10 minutes.

Season Rice

While rice is warm, gently fold in 2 tablespoons rice vinegar, 1 teaspoon sugar, and 1/2 teaspoon salt until evenly incorporated. Fan or stir gently to cool slightly if making for bento—this helps keep a glossy texture.

Prepare Vegetables

If using frozen edamame, thaw under warm running water or briefly blanch for 1 minute and shock in ice water. Drain. Thinly slice the cucumber and julienne the carrot. Toss edamame, cucumber, and carrot lightly with a pinch of salt and 1/2 teaspoon of the prepared sauce (optional) to season.

Assembly & Garnish

Portion the seasoned rice into the bento box or serving containers, filling one compartment about two-thirds full for each serving (approximately 1 cup cooked rice per person). Drizzle about 1 teaspoon of the reserved sauce over the rice to flavor.

Arrange steamed shrimp on top of or beside the rice in an attractive line or fan. Spoon 1–2 tablespoons of the remaining sauce over the shrimp or place sauce in a small dipping container within the bento.

Fill remaining compartments with edamame, cucumber slices, carrot juliennes, and a small mound of pickled ginger if using. Sprinkle toasted sesame seeds over the shrimp and rice, add a few nori strips, and scatter microgreens or cilantro for color. Place lime wedges on the side.

If packing to go, allow all components to cool to near room temperature (no more than 2 hours at room temp in total), secure lids, and keep refrigerated until serving. For immediate serving, garnish and serve warm or slightly warm.
