Prepare broth

In a medium pot, bring 6 cups of water or low-sodium stock to a gentle simmer over medium heat. If using dashi powder, whisk it into the simmering liquid until dissolved.

Integrate miso

Place the 4 tbs miso paste in a small bowl. Ladle about 1/2 cup of the hot broth into the bowl and whisk until smooth (this prevents clumps). Stir the miso slurry back into the pot. Keep the broth at a gentle simmer — do NOT boil vigorously once miso is added to preserve flavor and probiotics.

Add 1 tbs soy sauce to the broth, taste, and adjust for saltiness. Keep warm on low heat while you prepare other components.

Aromatics & Spice Paste

Make the chili-miso aromatics

Heat 1 tbs neutral oil and 1 tsp sesame oil in a small skillet over medium heat. Add the minced garlic (3 cloves), minced ginger (1 tbs), and the white parts of the scallions (from the 4 stalks). Sauté for 1–2 minutes until fragrant and just beginning to soften — do not brown.

Stir in 1 tbs kochujang and 1 tsp sambal oelek (or chili garlic sauce). Cook, stirring, for 30–45 seconds to bloom the chili paste. Remove from heat and stir in 0.5 tsp shichimi togarashi (if using) and 1 tbs toasted sesame seeds. Set aside.

Taste a small amount of the chili paste; adjust heat by adding more sambal (for heat) or a touch of honey (not listed) if you want a touch of sweetness.

Vegetables & Add-ins

Cook mushrooms and vegetables

Add the sliced shiitake mushrooms to the simmering miso broth and simmer gently for 4–5 minutes until tender. Add the julienned carrot and bean sprouts and simmer 1–2 minutes more until slightly softened but still bright.

Stir in the baby spinach or bok choy just before assembling — simmer 30–60 seconds until wilted but still vibrant green. Keep the broth hot but not boiling.

Protein (choose one or combine)

Soft-boiled eggs

Bring a small pot of water to a gentle boil. Carefully lower eggs (room temperature preferred) into the water and cook for 6 minutes for jammy yolks. Immediately transfer eggs to an ice bath for 4 minutes, then peel and halve. Reserve until serving.

Tofu

If using tofu, cube and gently warm the 8 oz tofu in the simmering broth for 1–2 minutes. Remove with a slotted spoon into bowls when assembling so tofu stays intact.

Thinly sliced pork or chicken (optional)

If using thinly sliced pork belly or chicken, briefly poach in the simmering broth just until cooked through (pork strips about 2–3 minutes, chicken 3–4 minutes depending on thickness). Remove and reserve for assembly.

Noodles & Garnish

Cook noodles

Cook 8 oz fresh or dried ramen noodles according to package instructions in a separate pot. For dried noodles: boil 3–4 minutes; for fresh: 1–2 minutes. Drain and divide between serving bowls.

Divide warmed protein (tofu, cooked pork/chicken) and vegetables evenly over the noodles. Ladle the hot miso broth and mushrooms over the noodles, about 1.5–2 cups of broth per bowl depending on bowl size.

Spoon 1–2 tsp of the aromatics & spice paste into each bowl (or to taste) so the chili-miso sits on top and melds into the broth when stirred. Top with halved soft-boiled eggs, torn nori, sliced green scallions (from the remaining 2 stalks), and additional toasted sesame seeds. Serve with lime wedges on the side for a bright squeeze if desired.
