Boil water
Bring 6 cups of water to a rolling boil in a medium saucepan over high heat.
Cook tapioca pearls
Once water is boiling, add 1 cup of uncooked tapioca pearls and stir gently to prevent sticking. Return to a boil, then reduce to medium-high heat and cook uncovered, stirring occasionally, following package timing—typically 18–25 minutes for large fresh-style pearls until they are tender with a slightly chewy center. If using quick-cook pearls, follow package time (usually 5–10 minutes).
Rest
After the pearls reach desired chewiness, turn off heat, cover the pot, and let the pearls sit in the hot water for 10–15 minutes (or as recommended on the package) to complete cooking and achieve a chewy center.
Rinse and cool
Drain the pearls into a colander and rinse under cool running water for 30–60 seconds to remove excess starch and stop cooking.
Ice bath
Transfer the rinsed pearls into a bowl with 1 cup of ice and a little cold water to quickly cool them for 1–2 minutes. Drain well.
Brown Sugar Syrup / Caramelized Boba Coating
Make syrup
In a small saucepan, combine 1 cup dark brown sugar, 1/4 cup light brown sugar, and 1/4 cup water. Heat over medium, stirring until the sugars dissolve. Bring to a gentle simmer and cook 3–5 minutes until syrup thickens slightly and darkens in color. Do not let it burn.
Add flavor
Remove from heat and stir in 1/2 tsp vanilla extract (optional) and 1/8 tsp salt. Taste and adjust: add a little more sugar if you want it sweeter or a pinch more salt to enhance caramel notes.
Coat pearls
Place the drained, cooled tapioca pearls into a bowl. Pour the warm brown sugar syrup over the pearls and toss gently to coat evenly. Let them sit in the syrup for at least 8–10 minutes so the pearls absorb flavor and become glossy. Reserve 2 tablespoons of the syrup for glass rimming and serving.
Milk Tea (Base Drink)
Brew tea
Steep 2 black tea bags (or 2 tablespoons loose-leaf black tea in an infuser) in 1 cup of hot water for 3–5 minutes depending on desired strength. Remove tea bags or strain leaves; let the tea cool slightly (about 5 minutes).
Mix milk tea
In a pitcher or measuring cup, combine the brewed tea with 1 cup of whole milk and 1 tablespoon sweetened condensed milk (optional) for extra creaminess. Stir until well combined. Taste and adjust sweetness with more condensed milk if desired. Chill briefly if you prefer a colder drink before assembling.
Prepare serving glasses
Drizzle reserved brown sugar syrup along the inside walls of two serving glasses to create the signature 'tiger stripe' look—use about 1 tablespoon per glass. Add a scoop (about 1/2 cup) of coated boba to the bottom of each glass.

Add extra syrup to taste on top of the boba if you like it sweeter. Insert a large straw and serve immediately so the pearls remain soft and chewy.
Storage notes
Fresh cooked boba is best consumed within 4 hours—store coated pearls at room temperature in their syrup for up to 4 hours. Do not refrigerate cooked boba for long periods (it hardens). Brown sugar syrup can be refrigerated in an airtight container for up to 2 weeks; gently reheat before using.
