Prepare proteins and fruits

If using shrimp, chop cooked shrimp into 1/2-inch pieces. If using rotisserie chicken, shred to bite-size pieces. Peel and julienne the mango, core and small-dice the pineapple, seed and julienne the cucumber, thinly slice the red pepper and julienne the carrot.

Mix dressing into filling

In a large bowl combine mayonnaise (or Greek yogurt), honey, lime zest and lime juice. Whisk until smooth. Add chopped shrimp (or chicken), mango, pineapple, cucumber, red pepper, carrot, chopped mint, chopped cilantro, and green onions. Gently fold to coat all ingredients. Season with 1/2 tsp salt and 1/4 tsp black pepper. Taste and adjust lime, salt, or honey as desired. Let sit 5–10 minutes for flavors to meld.

Dipping Sauce (Citrus Soy Ginger)

In a small bowl whisk together soy sauce, fresh orange juice, rice vinegar, grated ginger, honey (or agave), sesame oil and red pepper flakes if using. Taste and adjust sweetness or acidity. Sprinkle sliced scallion on top and set aside. Keep chilled until serving.

Wrappers & Assembly

Prepare a shallow dish or large skillet with warm water (not boiling) wide enough for the rice paper. Fill a second plate or towel for resting softened wrappers. If using butter lettuce, rinse and pat dry leaves and set aside.

Work one wrapper at a time. Submerge a rice paper wrapper wholly in warm water for 10–15 seconds until pliable but not falling apart. Lay it flat on the damp towel or plate.

Place 1 butter lettuce leaf (optional) near the bottom third of the wrapper. Spoon about 2–3 tablespoons of the prepared filling onto the center of the lettuce. Sprinkle a pinch of toasted sesame seeds over the filling.

Fold the bottom edge of the wrapper over the filling, then fold both sides inward snugly, and roll up firmly to enclose. The wrapper will stick and seal itself. Repeat with remaining wrappers and filling. You should get approximately 10–12 rolls depending on filling amount.

Trim ends with a sharp knife if desired and cut each roll in half on the bias for serving. Arrange on a platter with dipping sauce.
