Combine sugar and molasses

Place 1 cup granulated sugar in a medium mixing bowl. Add 2 tablespoons unsulfured molasses on top of the sugar.

Blend to incorporate

Using a fork, pastry cutter, or electric hand mixer on low, press and stir the molasses into the sugar. Continue until the molasses is evenly distributed and the mixture has the uniform color and texture of commercial light brown sugar (about 2–4 minutes by hand, 1 minute with a mixer). Break up any clumps with the back of the fork or scraper.

Adjust for darker brown sugar (optional)

If you want dark brown sugar, add an additional 1 tablespoon molasses (total 3 Tbs) and blend until even. Taste a small pinch to confirm desired flavor—add up to a total of 4 tablespoons for very dark and robust flavor if needed, mixing thoroughly each time.

Season lightly (optional)

Stir in 1 teaspoon sea salt if your recipe benefits from a touch of salt; this also enhances the molasses flavor. If using, mix in now until uniform.

Brown-butter note (optional)

For a richer, slightly caramelized note, cream 1 tablespoon softened unsalted butter into the finished brown sugar by mashing it with the sugar until evenly distributed. Note: this will change moisture and is best used immediately in baking; do not store long with butter mixed in.

Add vanilla (optional)

If you want a scented brown sugar for cookies or toppings, stir in 1/2 teaspoon vanilla extract and mix until even. Use immediately; moisture from extract will slightly soften the sugar.

Storage

Transfer finished brown sugar to an airtight container. Press down to remove air and seal tightly. Stored properly at room temperature, homemade brown sugar keeps well for several months.

Re-softening hardened brown sugar

If the sugar hardens, place a slice of bread or a piece of apple in the container for 6–12 hours to reintroduce moisture and soften the sugar. Remove the bread or apple afterward to avoid spoilage.
