Marinated Beef
Prep and Marinate
Place thinly sliced beef in a wide bowl. In a separate bowl, whisk together soy sauce, brown sugar, mirin, sesame oil, minced garlic, grated ginger, gochujang (if using), and black pepper until sugar dissolves. Pour marinade over beef, add sliced green onions and sesame seeds, toss to coat evenly. Cover and refrigerate for at least 30 minutes, preferably 2 hours for more flavor (up to overnight).
Cook Beef
Heat a large skillet or cast-iron pan over high heat until very hot. Add a thin film of neutral oil if your beef is lean. Add marinated beef in a single layer (working in batches if necessary) and sear, stirring occasionally, until browned and cooked through, about 3–5 minutes per batch. Scrape up browned bits and reduce heat to medium-high if browning too quickly. Transfer cooked beef to a plate and keep warm.
Pickled Vegetables (Quick)
Combine rice vinegar, water, sugar, and salt in a small bowl and stir until sugar dissolves. Place matchstick carrots and sliced cucumber in a small container or bowl and pour pickling liquid over them. Press down to submerge, let sit at room temperature for 10–15 minutes, then drain. Can be made up to 2 days ahead and refrigerated.

Cook Rice
Rinse short-grain rice under cold water until water runs mostly clear. Drain. Combine rinsed rice and 1.25 cups water in a small saucepan with a tight-fitting lid (or rice cooker). Bring to a boil over medium-high heat, then reduce to low, cover and simmer for 15 minutes. Remove from heat and let steam, covered, 10 minutes. Fluff with a fork before serving.
Sautéed Spinach (Sigeumchi-namul style, simple)
Heat 1 tsp vegetable oil in a medium skillet over medium heat. Add minced garlic and sauté 10–20 seconds until fragrant. Add baby spinach and toss until just wilted, about 1–2 minutes. Season with 1/2 tsp soy sauce and 1/2 tsp toasted sesame oil. Transfer to a bowl and sprinkle 1/2 tsp sesame seeds on top. Keep warm.
Assembly & Garnish
Divide cooked rice among 2 bento-style portions (about 1 cup cooked rice per serving). Arrange a generous portion of beef bulgogi alongside the rice. Add a small portion of sautéed spinach and a portion of quick pickled vegetables. Include 1/4 cup kimchi per bento and sprinkle with nori strips if using. Garnish beef with extra toasted sesame seeds and a lime or lemon wedge at the side for optional brightness.
Serve warm. Store leftover beef and rice separately in airtight containers in the refrigerator for up to 3 days; reheat gently before serving.
