Make ginger-lime syrup
In a small saucepan combine 0.75 cups water and 0.5 cups brown sugar. Add the grated ginger and the scraped seeds of the vanilla bean (or 1 tsp vanilla extract). Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
Reduce heat to low and simmer for 4–5 minutes to infuse the ginger. Remove from heat and let cool 10 minutes, then strain through a fine-mesh sieve into a bowl, pressing on solids to extract flavor. Discard solids.
Stir the 0.5 cups fresh lime juice and 0.25 tsp grated fresh nutmeg (if using) into the warmed syrup. Taste and adjust sweetness or acidity: add up to 2 tbsp more brown sugar if too tart, or another tablespoon lime juice if needed. Chill syrup until cold (about 20–30 minutes) or use immediately with cool ingredients.
Fruit & Flavor
In a pitcher combine 1 cup pineapple juice and 0.5 cup mango purée. Add 1 tsp maraschino cherry juice or a splash of grenadine for color and depth.
Add the chilled ginger-lime syrup to the fruit mixture and stir thoroughly to combine. Taste and adjust balance — the final mix should be bright, slightly sweet, with a warm ginger-lime backbone.
Carbonation & Serving
Fill four serving glasses with about 0.5 cup crushed ice each (total 2 cups). Divide the fruit-syrup mixture evenly among the glasses (about 3/4 cup per glass).
Top with soda
Carefully top each glass with chilled club soda or sparkling water, dividing the 2 cups among the glasses. Stir gently once to integrate without flattening the bubbles.
If making the boozy version, stir 1 tablespoon (4 tbs total across glasses) white rum into the pitcher before dividing, or add 1 tablespoon to each glass as preferred.
Garnish each drink with a lime wheel or wedge and a sprig of fresh mint. Optionally grate a tiny pinch more fresh nutmeg over the top for aroma. Serve immediately while fizzy.
