Prep the grapefruit
Roll 2 large grapefruits on the counter to loosen juices. Cut grapefruits in half and juice them until you have about 2 cups (480 ml) of juice. Strain the juice through a fine-mesh sieve into a measuring cup or bowl to remove pulp and seeds, pressing gently to extract as much liquid as possible.
Sweeten and balance
While the grapefruit juice is still slightly warm from straining (room temperature is fine), add 2 tablespoons granulated sugar and 1 tablespoon fresh lime juice. Stir until the sugar dissolves completely. Taste and adjust: if the grapefruit is very tart, add up to 1 additional tablespoon sugar; if too sweet, add a little more lime juice.
Chill and combine
Fill a large pitcher with 2 cups of ice. Pour the sweetened grapefruit juice over the ice. Slowly add 2 cups chilled club soda or sparkling water to retain fizz. Stir gently once or twice to combine — do not over-stir to avoid flattening the carbonation.
Prepare glasses (optional)
If using a salted rim, rub a lime wedge around the rim of four glasses and dip the rims into a small plate with a pinch of salt. Add several ice cubes to each glass.
Serve
Pour the mixed Ting evenly into four glasses over ice. Garnish each glass with a lime wedge and 2 mint leaves if desired. Serve immediately while fizzy.
