Clean and Marinate

Rinse the boneless goat cubes under cold water and pat dry with paper towels. Place the meat in a large bowl. Add lime juice (or vinegar), 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Toss to coat evenly. Cover and refrigerate for 30–45 minutes while you prepare the other ingredients. This step helps tenderize and remove gamey notes.

Prepare Aromatics

While the meat marinates, combine 3 tbs yellow curry powder, minced garlic, grated ginger, chopped onion, 1 tsp ground allspice, 1 tsp dried thyme, 1 tsp brown sugar, and 1 tbs soy sauce in a small bowl. Stir into a paste; add 1–2 tbs water if the mixture is too dry. Keep the whole scotch bonnet/habanero intact (do not chop) to add heat without dispersing seeds; you can prick it with a fork once if you want slightly more heat dispersed.

Brown the Meat

In a large heavy-bottomed pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering. Remove the goat from the marinade (reserve any juices) and pat the pieces dry lightly — dry surfaces brown better. Working in batches to avoid crowding, sear the goat pieces 3–4 minutes per side until browned on all sides. Transfer browned pieces to a plate and repeat with remaining meat, adding the remaining tablespoon of oil if needed.

Build the Curry

Reduce heat to medium. If the pot is dry, add a splash (about 1 tbs) of oil and add the chopped onion from the marinade mixture. Sauté onions 3–4 minutes until softened and translucent. Add the curry/garlic/ginger/spice paste and cook, stirring constantly, 1–2 minutes to bloom the spices and remove the raw floury taste. Return the browned goat and any collected juices to the pot. Add the reserved marinade liquid if any, and pour in 2 cups water or stock. Add the whole scotch bonnet (do not pierce), bay leaf, and the remaining 1 tsp salt (adjust later). Stir to combine and bring to a gentle simmer.

Simmer Until Tender

Cover the pot with a lid slightly ajar to allow steam to escape. Reduce heat to low and simmer gently for 1.5–2 hours, stirring occasionally and skimming any foam/fat from the surface. If using a pressure cooker or Instant Pot, cook on high pressure for 30–35 minutes and allow natural release for 10 minutes. Check tenderness after 1.5 hours; goat should be fork-tender and falling apart. If not tender, continue simmering and check every 15 minutes.

Add Potatoes (Optional)

If using potatoes, add the peeled and chunky-cut potatoes to the pot when goat is about 30 minutes from being done. Stir gently so the potatoes are submerged in the curry liquid. Continue simmering uncovered or partially covered until potatoes are tender, about 20–30 minutes.

Adjust Seasoning & Thicken

Once meat and potatoes are tender, remove the whole scotch bonnet pepper and bay leaf. Taste the sauce and adjust seasoning with more salt, 1/2–1 tsp sugar if desired, or a splash of soy sauce for umami. If the curry is too thin, increase heat and reduce uncovered for 5–10 minutes until slightly thickened. To thicken faster, mash a few potato chunks into the sauce or mix 1 tsp cornstarch with 1 tbs cold water and stir in; simmer 2–3 minutes.

Finish & Garnish

Stir in sliced scallions and 2 tbs chopped cilantro or parsley just before serving. Let rest off the heat 5 minutes. Serve the curry goat hot over steamed rice, with roti, or boiled dumplings. Provide sliced scotch bonnet on the side if guests want extra heat.
