Chickpea base
Soak chickpeas
Rinse 2 cups dried chickpeas under cold water until water runs clear. Place in a large bowl and cover with at least 4 cups fresh water. Add 1/2 tsp baking soda (optional) to speed softening. Soak 8 hours or overnight at room temperature.
Cook chickpeas (stovetop)
Drain soaked chickpeas and rinse. Put chickpeas in a large pot and add 6–8 cups fresh water and 1 tsp salt. Add bay leaf. Bring to a boil over high heat, then reduce to a simmer. Skim any foam, partially cover and simmer gently until tender, about 45–60 minutes depending on age of beans. If using a pressure cooker or instant pot, cook 10–12 minutes high pressure with natural release. Remove bay leaf and reserve cooking liquid.
Reserve
When chickpeas are tender but not falling apart, reserve 1/2–1 cup of the cooking liquid and drain remaining liquid. Set chickpeas and reserved liquid aside; you will add liquid later to adjust sauce consistency.
Sauce & aromatics
Stir in 4 minced garlic cloves, 1 tbs grated ginger, and 1 finely chopped green chili. Cook 1–2 minutes until raw smell disappears.
Add 1 cup chopped tomato (or 1 cup canned crushed tomato). Cook, stirring, until tomatoes break down and oil begins to separate from the masala, about 6–8 minutes. If using fresh tomatoes, cook until softened and pulpy.
Stir in the spices: 1 tsp ground coriander, 1 tsp ground cumin, 1/2 tsp turmeric, 1 tsp paprika or Kashmiri chili powder, and 1/2 tsp garam masala. Cook the spice mix for 1–2 minutes to bloom the flavors. Add 1.5 tsp salt, adjusting later to taste.
Combine & simmer
Add the cooked chickpeas to the tomato-onion-spice mixture. Stir to coat the chickpeas thoroughly.
Pour in 1/2 cup reserved chickpea cooking liquid (or water) to create a saucy consistency. Bring to a gentle simmer and cook uncovered for 10–12 minutes so flavors meld. If the sauce becomes too thick, add additional reserved liquid or plain water by 1/4-cup increments until you reach a slightly thick, stew-like consistency.
If you prefer a creamier texture, mash 1/4 of the chickpeas lightly with the back of a spoon against the pan and stir to thicken the sauce.
