Make the Churro Dough

In a medium saucepan, combine the water, butter, sugar, and salt. Bring to a boil over medium heat.

Add Flour

Once boiling, remove from heat and stir in the flour until well combined and a dough forms.

Incorporate Eggs

Allow the dough to cool slightly, then add the eggs one at a time, mixing thoroughly after each addition until the dough is smooth.

Prepare for Frying

Transfer the dough into a piping bag fitted with a large star tip.

Heat the Oil

In a large, deep pot, heat the vegetable oil to 375°F (190°C) over medium heat.

Fry the Churros

Pipe 4-6 inch strips of dough into the hot oil, frying until golden brown, about 2-3 minutes per side.

Drain and Coat

Using tongs, remove the churros from the oil and place them on a paper towel-lined plate to drain. Immediately roll them in a mixture of sugar and cinnamon.

Chocolate Sauce

Heat Cream

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

Add Chocolate

Remove from heat and stir in the chocolate chips until melted and smooth.

Add Vanilla

Stir in the vanilla extract until well combined.

Serve

Transfer the chocolate sauce to a serving bowl and serve warm alongside the churros.
