    Form patties

    Divide the 1 lb ground Black Angus into two equal portions (about 8 oz each). Gently form into patties about 3/4"–1" thick, making a shallow indent in the center of each patty with your thumb to help them cook evenly. Handle loosely — do not overwork the meat.

    Season

    Season both sides of each patty generously with kosher salt (about 1/2 tsp per side total) and freshly ground black pepper.

    Cook patties

    Heat a heavy skillet or cast-iron pan over medium-high heat until hot. Add 1 tsp olive oil and 1 tbs softened butter. When butter foams, add patties. Cook undisturbed 3–4 minutes until a browned crust forms. Flip and cook 3 minutes for medium-rare to medium (adjust 1–2 minutes per side for desired doneness).

    Melt brie

    About 1 minute before the patties are finished, top each patty with 2 oz of brie. Reduce heat to low, cover the pan with a lid or tent with foil for 30–60 seconds to gently melt the brie. Remove from heat and let rest 2 minutes.

Bacon-Onion Fig Jam

    Cook bacon

    While preparing patties, cut bacon into 1/2" pieces. In a medium skillet over medium heat, cook bacon pieces until crisp, about 6–8 minutes, stirring occasionally. Transfer bacon to a paper towel-lined plate, reserving about 1 tablespoon of bacon fat in the pan (drain excess).

    Caramelize onions

    Add the thinly sliced onion to the reserved bacon fat and 1 tsp olive oil if needed. Cook over medium-low heat, stirring occasionally, until soft and golden, about 10–12 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Finish jam

    Stir in the fig preserves, balsamic vinegar, brown sugar, cooked bacon, thyme (if using), and black pepper. Bring to a gentle simmer and cook 3–4 minutes until glossy and slightly thickened. Taste and adjust seasoning. Remove from heat and keep warm.

Assembly & Serving

    Toast buns

    Split brioche buns and spread 1/2 tbs softened butter on each cut side. Toast buttered sides in a dry skillet or on a griddle over medium heat until golden, about 1–2 minutes per side.

    Optional mustard/greens

    If using, spread whole grain mustard on the bottom bun and place a small handful of mixed salad greens on top to add brightness and texture.

    Assemble burger

    Place the brie-topped patty on the bottom bun (on top of the mustard/greens if using). Spoon 2–3 tablespoons of the warm bacon-onion fig jam over the melted brie. Cap with the top brioche bun.

    Serve

    Serve immediately while the cheese is melty and the jam is warm. Provide extra fig jam on the side if desired.
