Slider Patties

    Make and shape patties

    In a large bowl combine ground beef and ground pork. Add grated onion, minced garlic, smoked paprika, ground cumin, dried oregano, 1 tsp salt, 1/2 tsp black pepper and Worcestershire sauce. Gently mix with your hands or a spatula until just combined; avoid overworking. Divide mixture into three equal portions (about 5.3 oz / 150 g each) and form thin, wide patties slightly larger than the slider buns (about 3–3.5 inches diameter). Make a shallow dimple in the center of each patty to prevent doming during cooking.

    Cook patties

    Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat until shimmering. Add patties (work in batches if needed) and cook 2–3 minutes per side, or until a brown crust forms and internal temperature reaches 160°F (71°C). If using cheese, place a halved slice of American cheese on each patty in the last 30 seconds of cooking and cover the pan briefly to melt. Transfer cooked patties to a plate and tent with foil to keep warm.

Onion Topping

    Quick pickled onions

    While patties cook, place thinly sliced onion in a small bowl. Stir together white vinegar, 1 tablespoon water, 1/2 teaspoon sugar, 1/4 teaspoon salt and a pinch (1/8 tsp) black pepper until sugar and salt dissolve. Pour the mixture over the onion, toss to coat, and let sit for at least 10 minutes (or up to 1 hour). The onions will soften and develop a bright, tangy flavor.

Shoestring Potatoes

    Cook shoestring potatoes

    If using frozen shoestring potatoes, heat 2 cups vegetable oil in a medium saucepan or fryer to 350°F (175°C). Fry potatoes in batches for 2–3 minutes until crisp and golden. Remove with a slotted spoon and drain on paper towels. Immediately sprinkle with 1/4 tsp salt. If using fresh matchstick potatoes, pat dry thoroughly, fry the same way in 350°F oil until golden and crisp (3–4 minutes) and season with salt.

Assembly

    Toast buns and sauce

    Split the 3 slider buns and lightly toast cut sides in a skillet or oven until golden. Mix mayonnaise and mustard in a small bowl and spread about 1 teaspoon mayo-mustard on the bottom of each toasted bun.

    Assemble sliders

    Place a warm cheesed patty on each bottom bun. Top each patty with a generous pinch of pickled onions (about 1 tablespoon per slider). Heap a small handful (about 1 ounce) of shoestring potatoes on top of the onion for crunch. Cap with the top bun and serve immediately while patties are juicy and fries are crisp.

    Serving suggestion

    Serve the three Cuban Frita Sliders on a platter, with extra shoestring potatoes and pickled onions on the side. Provide ketchup or a spicier ketchup-mayo if desired.
