Prepare the Brisket

Season the brisket with smoked paprika, salt, and black pepper. Rub the seasoning evenly over the meat.

Sear the Brisket

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the brisket on all sides until browned (about 3-4 minutes per side).

Roast the Onion

Slice the onion into wedges and toss with remaining olive oil. Place on a baking sheet and roast in the oven at 400°F (200°C) for 25-30 minutes until caramelized.

Cook the Brisket

Transfer the seared brisket to a slow cooker. Add a splash of water, cover, and cook on low for 8-10 hours, or until tender.

Make Avocado Serrano Salsa

In a bowl, mash the avocados and mix in finely chopped serrano chili, lime juice, and salt to taste.

Serve

Once the brisket is cooked, slice it against the grain. Serve with roasted onion and top with avocado serrano salsa.
