Pickled Jalapeños

Prepare the Pickling Liquid

In a saucepan, combine white vinegar, water, sugar, and salt. Heat over medium until sugar and salt dissolve.

Pickle the Jalapeños

Slice jalapeños and add them to the pickling liquid. Add garlic cloves. Simmer for 10 minutes, then let cool and refrigerate for at least 1 hour.

Cucumber Mint Salsa

Prepare the Salsa

Dice cucumber and red onion. In a bowl, combine cucumber, minced mint leaves, red onion, lime juice, salt, and pepper. Mix well and set aside.

Smoked Chili Vinaigrette

Make the Vinaigrette

In a bowl, whisk together olive oil, red wine vinegar, smoked chili powder, honey, salt, and pepper until well combined.

Assembly

Combine and Serve

On a serving plate, layer pickled jalapeños, cucumber mint salsa, and drizzle with smoked chili vinaigrette. Serve immediately.
