Fries Preparation

Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thick fries.

Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry the Fries

Drain and thoroughly dry the fries using a clean kitchen towel.

Heat the Oil

In a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add the fries in batches to the hot oil and fry until golden brown, about 4-5 minutes.

Drain and Season

Remove the fries from the oil and drain on paper towels. Sprinkle with salt to taste.

Guajillo Aioli Preparation

Prep the Guajillo Peppers

Remove the stems and seeds from the guajillo peppers. Soak them in hot water for 15 minutes.

Make the Aioli

In a blender, combine the soaked guajillo peppers, garlic, mayonnaise, lemon juice, and salt. Blend until smooth.
