Cook the Potatoes

Peel and chop the potatoes into small cubes. Boil in salted water until tender, about 15-20 minutes. Drain and mash the potatoes in a bowl.

Mix the Filling

Add shredded cheddar cheese, black pepper, and garlic powder to the mashed potatoes. Mix until well combined.

Prepare the Tortillas

Heat the corn tortillas in a dry skillet for a few seconds on each side until pliable.

Fill and Roll

Place about 2 tablespoons of the potato and cheese filling onto the lower third of each tortilla. Roll tightly and secure with a toothpick if desired.

Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Taquitos

Fry the taquitos in batches, turning until golden and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
