Method
Preparation
Prepare the Beets
Preheat the oven to 400°F (200°C). Wash and trim the beets. Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and pepper. Bake for 45-60 minutes until tender. Once cooked, peel and slice.
Make the Sweet Potato Mash
Peel and chop the sweet potatoes into chunks. Boil in salted water until tender (about 15-20 minutes). Drain and mash with butter, milk, salt, and pepper until smooth.
Prepare the Spiced Pecans
In a bowl, mix pecans with olive oil, curry powder, brown sugar, and salt. Spread on a baking sheet and roast in the oven at 350°F (175°C) for about 10-12 minutes until fragrant.
Cooking the Salmon
Grill the Salmon
In a small bowl, mix curry powder, maple syrup, olive oil, salt, and pepper. Brush the mixture generously over the salmon fillets. Preheat the grill to medium-high heat. Grill the salmon for about 5-7 minutes per side, or until cooked through and flaky.

In a large skillet, heat olive oil over medium heat. Add the mixed seasonal vegetables, season with salt and pepper, and sauté until tender-crisp, about 5-7 minutes.
