Prepare the Filling

In a large skillet, heat the oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.

Cook the Vegetables

Add the chopped cauliflower and sweet potato to the skillet. Cook for about 5-7 minutes until they start to soften.

Add Chickpeas and Spices

Stir in the cooked chickpeas, cumin, coriander, turmeric, garam masala, and salt. Cook for another 5 minutes, stirring occasionally.

Cool the Filling

Remove the skillet from heat and let the filling cool while you prepare the dough.

Prepare the Dough

In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and enough water to form a smooth dough. Knead for about 5 minutes and let it rest for 30 minutes.

Assemble the Samosas

Divide the dough into small balls and roll each ball out into a thin circle. Cut the circle in half and form a cone, sealing the edge with a little water. Fill the cone with the vegetable filling and seal the top with more water.

Fry the Samosas

Heat oil in a deep frying pan. Fry the samosas in batches until golden brown and crispy. Drain on paper towels.

Serve

Serve the samosas hot with your favorite dipping sauce.
