Cook the Penne Noodles

In a large pot, bring salted water to a boil. Add the penne noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are soft.

Add Chickpeas and Spinach

Stir in the chickpeas and cook for another 2-3 minutes. Add the baby spinach and cook until wilted, about 2 minutes.

Prepare the Coconut Carbonara Sauce

In a bowl, whisk together the coconut milk, nutritional yeast, salt, and black pepper until smooth.

Combine Ingredients

Pour the coconut carbonara sauce over the vegetable mixture in the skillet. Add the cooked penne noodles and diced tomatoes. Toss everything together to coat evenly.

Divide the chickpea carbonara among serving plates, and top with plant-based nut parmesan. Serve warm.
