Preparation of Crab

Marinate the Crab

In a bowl, mix the crab meat with lemon juice, Old Bay seasoning, and salt. Cover and refrigerate for at least 30 minutes.

Jicama Slaw

Prepare the Slaw

In a separate bowl, combine jicama, shredded carrot, cilantro, lime juice, and salt. Toss well and set aside.

Fried Green Tomatoes

Fry the Tomatoes

Dredge the sliced green tomatoes in flour, dip in beaten egg, and then coat in cornmeal mixed with salt. Heat oil in a skillet over medium heat and fry the tomatoes until golden brown on both sides. Drain on paper towels.

Charred Grapefruit Vinaigrette

Make the Vinaigrette

Char the grapefruit halves on a grill or under a broiler until slightly charred. Squeeze the juice into a bowl, add olive oil, honey, and salt, and whisk until combined.

Assemble the Salad

On a plate, layer the fried green tomatoes, top with jicama slaw, and finish with marinated crab. Drizzle with charred grapefruit vinaigrette before serving.
