Prepare the Filling
In a bowl, combine the shredded chicken, smoked paprika, cumin, salt, pepper, and half of the red enchilada sauce. Mix well.
Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Take one tortilla, spoon some of the chicken mixture onto the center, and roll it up. Place seam-side down in a greased baking dish. Repeat with remaining tortillas.
Add Sauce and Cheese
Pour the remaining red enchilada sauce over the rolled enchiladas and sprinkle the shredded cheese on top.
Bake
Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
