Pimento Cheese

Method

Preparation

1

Char the Jalapeños

Preheat your grill to medium-high heat. Place the jalapeños on the grill and char them on all sides until the skin is blistered and darkened, about 8-10 minutes. Remove from the grill and let cool.

2

Prepare the Pimento Cheese

Once the jalapeños are cool enough to handle, remove the stems and seeds (leave some seeds if you want extra heat). Finely chop the jalapeños and add them to a mixing bowl. Add the cream cheese, sharp cheddar cheese, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

3

Finish with Fresh Herbs

Stir in the chopped fresh parsley for added freshness and flavor.

4

Serve

Serve the charred jalapeño pimento cheese with grilled toast, fresh celery sticks, and pepper ceviche.
