Preparation
Prepare the Fritter Batter
In a large bowl, combine the blue crab meat, all-purpose flour, cornmeal, egg, green onions, parsley, Old Bay seasoning, salt, and black pepper. Mix until just combined.
Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fritters
Using a spoon or ice cream scoop, drop spoonfuls of the crab mixture into the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare the Citrus Aioli
In a small bowl, whisk together mayonnaise, lemon juice, grapefruit juice, and a pinch of salt until smooth.
Serve
Serve the blue crab fritters warm with shaved fennel, celery hearts, grapefruit segments, and drizzle with citrus aioli.
